El Pimiento Restaurant: fixing a grease-trap code violation with an engineered compliance path.

At an operating restaurant, the goal is not to overreact to a violation notice. The goal is to identify exactly what is deficient, design the correction and get the technical documentation accepted.

DoubleDay Engineering is working with El Pimiento Restaurant at 16403 NW 67th Avenue in Miami Lakes on Miami-Dade DERM GDO #7099, a fats, oils and grease compliance matter involving the restaurant's existing grease-trap/interceptor system.

The notice does not automatically mean “replace the grease interceptor.” The engineering question comes first: verify the existing system, determine what is actually deficient, and design only the correction required for compliance.

What DERM required

The notice requires installation of a sampling port and Florida PE-signed-and-sealed FOG plans within 90 days. It also requires used cooking oil/yellow grease to be stored in a closed container and made available for inspection within seven days.

What DoubleDay is doing

Our scope includes field and as-built verification, review of the existing interceptor, fixtures and grease-waste piping, sizing calculations, sampling-port design, required FOG corrections, signed-and-sealed plans, and coordination with DERM and the Building Department.

Why this kind of violation gets expensive

Restaurant owners can lose time and money when they begin replacing equipment before the technical requirement is established. Existing pumping records, actual field conditions, fixture load, interceptor capacity and piping configuration all matter. The right sequence is investigate first, design second, permit and correct third.

The closeout objective

The project is being carried toward a documented compliance package: verified existing conditions, the required engineered correction, signed-and-sealed plans, agency review, permitted work where required, inspection and technical closeout.

Restaurant grease-trap or FOG violation?

Do not assume the most expensive correction is the required correction. Start with the notice and the actual plumbing conditions.
